With children going back to school Rachel devised this yummy granola cookie recipe with her baking assistant, Ava, perfect for children’s pack lunches using our delish Honey, Nuts & Cranberry granola.
Ingredients
- 227g Butter 227g
- 141g Brown sugar
- 53g Caster sugar
- 2 large eggs
- 213g Gluten Free flour
- 340g Forthay Granola – Honey, Nuts & Cranberry
- 85g Dark chocolate drops (optional)
Method
- Cream Butter and sugars together.
- Add eggs and mix.
- Sift flour over the mixture and gently fold in.
- Add granola/chocolate chips and fold in gently.
- Blob a table spoon sized amount of mixture on to a lined baking tray about 2 inches apart.
- Flatten slightly into rough circles.
- Bake at 160 fan for 15-18 mins-may need longer but should look golden.
- Cool on a cooling rack.
